Delicious 'cosy night in' cheese salad
Fresh, quick, delicious and not boring cheese salad!
Who doesn't flippin' love a cheeseboard?! Cheeseboards work perfect harmony in my house as my husband Martyn and I make a beeline for the opposite cheeses - I'm a Brie and blue fan and he goes for the likes of Cheddar and Wensleydale. We both devour our own chunks and everyone is happy! Martyn is a cheeseboard kind of guy and has made me some jaw dropping cheeseboards over the years, and I've gleefully eaten my body weight in cheese and crackers. I can't do that every day though, so for a more nutritious version I made myself this and I can't wait to make it again.
This is super quick to prepare, has all the indulgence and flavour of a cheeseboard, but with the benefit of more greens and less crackers!
This is no complex recipe, but it's just a lovely combination that is quick to make and looks eye-catching, fresh and delicious. It also works well as A salad to serve with an accompanying full cheeseboard and wine. great if having guests round.
IF YOU HAVE CHILDREN
If you have kids - You can easily adapt this salad to be child-friendly by separating out the ingredients into more of a 'grazing board' and seeing which bits they'd like to pick at. They might surprise you and try something you're not expecting. I'm always amazed that my pickiest child who will hardly eat anything will happily eat walnuts and celery, and I only found out because they came picking bits from my plate that I thought they wouldn't eat!
FOR THE ADULTS - this is great with wine and good quality bread.
